Matcha Chia Seed Pudding with Chocolate & Pistachios
Matcha and chia seed could be the perfect combination of energy and antioxidants! Matcha provides a source of polyphenols and caffeine, while chia seed provides a source of omega-3 and protein.

Matcha Chia Seed Pudding
- 2 tbsp chia seeds
- 1/4 cup unsweetened almond milk
- 1 tbsp coconut yoghurt
- 1/2 tsp stevia
- squeeze of lemon
Chocolate Coating & Blood Orange
- 4 oz 70% dark chocolate
- 1 tsp crushed pistachios
- pinch matcha powder
- pinch crushed Himalayan pink salt
- 1 small blood orange segments
Mix chia seeds, lemon juice, almond milk and coconut yoghurt until fully soaked
Stir matcha and stevia into chia seed mixture until fully blended
Place in the fridge to chill and set for 15 to 20 minutes
Melt chocolate in the microwave
Pour over chilled chia seed pudding, top with pistachios and matcha, add a dash of pink Himalayan salt if desired
Place back in fridge until the chocolate sets
Crack the top, and add blood orange or your favourite fruit
